Description
  1. What is Sucralose?
  2. Sucralose has no energy, high sweetness, pure sweetness, high safety, etc. It is also one of the most ideal sweeteners.
The sweetness of sucralose is about 600 times that of sucrose, and its sweetness is pure. Its sweetness characteristics and sweetness quality are very similar to sucrose. It is very stable in general food processing and storage, has good water solubility, and is suitable for various food processing processes. Sucralose can be used in many fields such as beverages, pickles, compound seasonings, blended wine, ice cream, cakes, biscuits, bread, etc.
  3. 1.Sucraloseis directly edible and can be used in confections, cakes, beverages, biscuits, torrefied foods, jam jelly and honey products for better taste, quality and low cost
  4. 2.For cakes and torrefied foods it can keep soft, and extend shelf life.
  5. 3.Sucralosecan be dissoluted, it can widely used in beverages and cold food.

What is Sucralose Made of?
Dissolving sucrose:
Add sucrose to heated distilled water, stir well and heat to 70°C until completely dissolved. This step needs to ensure that the sucrose is completely dissolved, which usually takes 1-2 hours.
Acidic conditions:
Hydrochloric acid is slowly added to the sucrose aqueous solution to maintain the pH value between 1-2. At the same time, chlorine gas is passed through the solution at a concentration of 5-10% to maintain the reaction system under acidic conditions. This step needs to last for 4-6 hours.
Chlorine substitution reaction:
At a temperature of 50°C, chlorine gas gradually replaces the hydroxyl group (-OH) in the sucrose molecule to form chlorosucrose. This reaction may go through multiple stages, producing a series of chlorinated products and finally forming sucralose. The reaction time is usually 6-8 hours.
Purification:
The reaction solution is cooled to room temperature and then purified to obtain sucralose through a process of crystallization and filtration. These steps help to remove unreacted substances, by-products and residual acid, thereby obtaining high-purity sucralose.
The entire synthesis process requires appropriate temperature, pressure and pH. The reaction was carried out under the following conditions to ensure high yield and product purity. In addition, stirring, chlorine gas introduction rate and solution ventilation during the reaction are also important factors to ensure reaction uniformity and yield.
